Baking with Abi: The Apple Pie story

This story might get a bit confusing, because it involves 2 different apple pies (well, 3 really). When my mom was visiting last week, we went Apple-Picking. Then the next morning, we spend 4 HOURS making 2 apple pies completely from scratch (and cleaning up afterwards). Since I only do this once or twice a year, I'm no expert. And we all found out this fact when we took our first bite...it was totally rancid! It turns out that vegetable shortening CAN go bad!! I even looked up on the internet..I just had no idea. Neither did I know that you should put it in the fridge to stay. Well, lesson learned. Then today we had our 2nd attempt. I used a Pie Crust mix from the store. Still had to roll it out and peel and chop all the apples. But the result was much, much better. Even delicious.

The important thing with the last picture is that they LOOK good. Keep them out for a few days and when people come over and comment on how good they look just say something like, "Ah, yes! Those are for a very special occassion." Then you get the compliment but don't have to let them tase it.

Thanks for the reminder about our finiteness and the encouragement that that brought!!!
As to visiting Boston, i'm afraid that isn't going to happen this Fall as I had hoped. I can only afford one trip far away this season, and it is to visit my best friend in Oklahoma - her husband is currently on military deployment ;(
However, I still want to come out to the East Coast soon - possibly Spring Break?? I just have to be good with my money, what with grad classes, paying back undergrad school loans, and planning on returning to Rwanda this summer! (which I'm super stoked about!!!!)
